Ingredients:
- 1kg dried rice noodles
- 100g mangetout
- 1kg cooked chicken
- 300ml Blue Dragon Sweet Chilli Sauce
- Juice of 1/2 a lime
- Bag of baby spinach
- 20 spring onions sliced
- 10 red chilli deseeded and finely sliced
- 400g fresh coriander, chopped
- 250 grams roasted cashew nuts
Method
- Cook the noodles
Prepare the rice noodles according to the package instructions. Once cooked, drain well and cool under running water. Drain again thoroughly and set aside.
- Blanch the mangetout
Bring a pot of water to boil and blanch mangetout for one minute. Then transfer the mangetout to a bowl of iced water using a slotted spoon. Let it cool for 3-4 minutes, then drain well and dry on kitchen paper. - Prepare the chicken and noodles mix
In a bowl, combine the cooked chicken with the cooled noodles. Add Blue Dragon’s sweet chilli sauce and juice of half a lime. Stir until the chicken and noodles is well coated in the sauce.
- Assemble the salad
Begin by laying a base of spinach in your serving bowl. Add the sweet chilli mixture then top with the mangetout, spring onions, sliced chilli and fresh coriander. - Garnish and serve
Finish by sprinkling roasted cashew nuts over salad and enjoy!
