Ingredients:

• 1kg dried rice noodles
• 100g mangetout
• 1kg cooked chicken
• 300ml Blue Dragon Sweet Chilli Sauce
• Juice of 1/2 a lime
• Bag of baby spinach
• 20 spring onions sliced
• 10 red chilli deseeded and finely sliced
• 400g fresh coriander, chopped
• 250 grams roasted cashew nuts

Method

1. Cook the noodles Prepare the rice noodles according to the package instructions. Once cooked, drain well and cool under running water. Drain again thoroughly and set aside.
2. Blanch the mangetout Bring a pot of water to boil and blanch mangetout for one minute. Then transfer the mangetout to a bowl of iced water using a slotted spoon. Let it cool for 3-4 minutes, then drain well and dry on kitchen paper. 
3. Prepare the chicken and noodles mix In a bowl, combine the cooked chicken with the cooled noodles. Add Blue Dragon’s sweet chilli sauce and juice of half a lime. Stir until the chicken and noodles is well coated in the sauce.

4. Assemble the salad Begin by laying a base of spinach in your serving bowl. Add the sweet chilli mixture then top with the mangetout, spring onions, sliced chilli and fresh coriander. 
5. Garnish and serve

Finish by sprinkling roasted cashew nuts over salad and enjoy!
